As I mentioned, a big tip to remember is that using a coarse grater will make the garlic easier to grind and remove the tough seeds. Use a butter knife, the finer the blade, the finer the grater. That means you should buy a variety of garlic and keep the graters handy. If you have a variety of cloves available, then you will probably have no problem finding the right one to use with any recipe.
